Well, after a long break here goes a nice little cupcake recipe that is simple and delicious. I have been busy with a thousand and one things so I have not posted any creations for a few weeks, so this one is extra special. It essentially is a chocolate base with a vanilla frosting. Garnished with some marshmallows and drizzled with a little bit of chocolate sauce… yum….no…super yum!!

I enjoyed eating this treat although I was tempted to leave it alone as I am watching my diet..but..ahh… couldn’t resist. Maybe next time I will be a little stronger and exercise greater self-control, but that’s the pleasure of being a cook. You get to eat or at least sample all of the food. And these Chocolate marshmallow Cupcakes are no exception.

Chocolate Marshmallow Cupcakes

Chocolate Marshmallow Cupcakes


  • 2 ounces (60 grams) unsweetened chocolate, chopped
  • 2 tablespoons (15 grams) unsweetened cocoa powder (not Dutch-processed)
  • 1/2 cup (120 ml) boiling water
  • 1 cup plus 2 tablespoons (150 grams) all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup (113 grams) unsalted butter, room temperature
  • 1 cup (200 grams) granulated white sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1/2 cup (120 ml) milk
  • Marshmallow Cream Frosting:
  • 1 cup (226 grams) unsalted butter, room temperature
  • 1 teaspoon pure vanilla extract
  • 1 - 7 ounce (198 grams) jar of marshmallow creme
  • 2 cups (230 grams) confectioners sugar (icing or powdered sugar), sifted
  • 2-4 tablespoons light cream


  1. Chocolate Cupcakes: Preheat your oven to 350 degrees F (which is 177 degrees C) and place the rack in the center of the oven. Line 15 fresh muffin cups with paper liners.
  2. In a stainless steel or you may also use a heatproof bowl place the chopped unsweetened chocolate along with the cocoa powder. Pour the hot boiling water over the chocolate and the cocoa powder and then stir until they have melted. Place aside to cool while you prepare and make the batter.
  3. In another bowl, whisk to combine, the flour, the baking powder, the baking soda, and the salt.
  4. In the mixing bowl of your electric mixer, or you may also use a hand mixer, beat the softened butter until the texture is smooth and creamy. Gradually begin adding the sugar and then continue beating until all of the mixture is soft and fluffy. Add the eggs, one by one, beating thoroughly after each addition. Add the vanilla extract along with the melted chocolate mixture and then beat to combine.
  5. Add the flour mixtures and milk in three additions, starting and ending with the flour mixture. Beat only once the ingredients are incorporated.
  6. Evenly divide all of the batter among the 15 muffin cups, and bake for around 18 - 23 minutes or until a clean toothpick inserted into the center of a cupcake comes out clean. Remove the cupcakes from the oven and place on a wire rack to cool. Pipe or spread the frosting on each cupcake.
  7. Marshmallow Cream Frosting: In the mixing bowl of your electric mixer, or using a hand mixer, beat the softened butter until smooth. Beat in the vanilla extract and the marshmallow creme. With the mixer on a low speed setting, gradually beat in the sugar. Add the cream and beat to combine. Then, on high speed setting, beat the frosting until it is light and fluffy (around 3-5 minutes). Add more cream or confectioners sugar if necessary to get the right piping consistency.
  8. Garnish your cupcakes with some marshmallows.
