Recipe: Fourth of July Vanilla Wafer Bites

Makes: 30–36 bites | Prep time: 15–20 minutes | Cook time: None

Ingredients

For the base:

  • 1 box (11 oz / 312 g) store-bought vanilla wafers

For the cream cheese frosting:

  • 8 oz (225 g) full-fat cream cheese, softened to room temperature
  • ½ cup (120 ml) heavy whipping cream, cold
  • ¾ cup (90 g) powdered sugar, sifted
  • 1 tsp vanilla extract

For the topping:

  • 1 cup (150 g) fresh strawberries, hulled and quartered
  • 1 cup (150 g) fresh blueberries
  • Red, white & blue sprinkles
  • Fresh mint leaves, for garnish (optional)

Method

  1. Make the frosting. Beat the softened cream cheese with an electric mixer until completely smooth and lump-free, about 2 minutes. Add the powdered sugar and vanilla and beat again until combined. With the mixer running on medium speed, slowly pour in the cold heavy cream. Increase to high speed and beat until the frosting is thick, fluffy, and holds stiff peaks, about 2–3 minutes.
  2. Fill the piping bag. Transfer the frosting to a piping bag fitted with a large star tip (a 1M tip works perfectly). If you don’t have a piping bag, a zip-lock bag with one corner snipped off works just fine — the swirl won’t be as defined, but it’ll still look great.
  3. Arrange the wafers. Lay the vanilla wafers flat side up on a large tray or serving platter in a single layer.
  4. Pipe the frosting. Pipe a generous swirl of frosting onto the center of each wafer, starting from the outside and spiraling inward, finishing with a little peak in the middle.
  5. Add the fruit. Top each frosted wafer with either a wedge of strawberry or one or two blueberries — or mix it up so the tray has a variety of both. Press the fruit gently into the frosting so it sits securely.
  6. Add the sprinkles. Scatter a pinch of red, white, and blue sprinkles over each bite. Tuck a small mint leaf alongside the fruit on a few of them for a pop of green and a fresh finish.
  7. Chill and serve. Refrigerate for at least 10 minutes before serving so the frosting firms up slightly. Arrange on a platter and serve cold.

Tip: Make sure your cream cheese is fully softened before you start — cold cream cheese will leave lumps in the frosting no matter how long you beat it. Take it out of the fridge at least 30 minutes ahead.

Tip: A large star piping tip gives you that beautiful bakery-style swirl, but it’s not essential. Even a simple spoonful of frosting spread with the back of a spoon looks charming and rustic on these little bites.
