Smiley Blueberry Cupcakes with Honey Buttercream
I actually loved eating these cupcakes! I decided to visit my friends mother with my newly acquired camera and asked her if she would mind letting me know when she baked the next batch of ‘whatever’. Whatever happened to be these blueberry cupcakes with smiley faces and i just loved them. So below is the recipe which is actually not too hard to make. Smiley Blueberry Cupcakes
Ingredients
1/2 cup sugar ( raw, 125g )
2 eggs ( medium sized )
3/4 cup flour ( 175g )
1 teaspoon baking powder
1/4 cup blueberries ( 50g )

Directions
Beat the eggs until thick and then add alternatively with sifted flour and baking powder.
Add the blueberries with the last of the flour.
Place the mixture into cupcake liners.
Bake for 10 to 12 minutes at 200 C (400 F)
Allow them to cool
For the icing
Add the icing sugar and then add a little water or more icing sugar until you get the right consistency.
Ice the cupcakes.
Use two blue berries for the ice and a piece of logan berry or raspberry for the nose.
Put a little red coloring into the icing sugar and pipe a smiley face onto the cupcakes.

Instructions
- Cream the butter and sugar together in a bowl.
- Beat the eggs until thick and then add alternatively with sifted flour and baking powder.
- Add the blueberries with the last of the flour.
- Place the mixture into cupcake liners.
- Bake foe 10 to 12 minutes at 200 C (400 F)
- Allow them to cool
- For the icing
- Place a teaspoon of butter into a pan and melt.
- Add the icing sugar and then add a little water or more icing sugar until you get the right consistency.
- Ice the cupcakes.
- Use two blue berries for the ice and a piece of logan berry or raspberry for the nose.
- Put a little red coloring into the icing sugar and pipe a smiley face onto the cupcakes.
