Waffles and Chicken Nuggets Recipe
I found my mini waffle maker in the back of the pantry when I did the spring clean the other day, and of course, I needed to use it right away just so I could forget about it for another six months. I’m not the biggest fan of sweet waffles, so I made an aromatic, savory version to serve with my fried crispy chicken. It turned out party-worthy, so I’m sharing with you a recipe for chicken waffles so that you can serve them at get-togethers this summer – they are true crowd-pleasers!

For Crispy Chicken
- 3 chicken breasts (cubed)
- 1 cup Greek yogurt
- 2 tsp salt
- 1 tsp pepper
- 1 tsp onion powder
- 1 tsp cayenne pepper
- 1 tbsp parsley
- 1 tsp turmeric
- 1 cup breadcrumbs
- ¼ cup parmesan
- 1 tsp garlic powder
- 2 cups vegetable oil (for frying)
For Waffles
- 1 egg
- 1 tbsp olive oil
- ¼ cup milk
- ¼ cup Greek yogurt
- ¾ cup all-purpose flour
- 2 tsp baking powder
- 1 tbsp sesame seeds
- 1 tbsp flaxseeds
- ½ cup shredded gouda
- 1 tbsp chives
- 1 tsp salt
Instructions
Fry the Chicken
- Slice chicken breasts into two bite-size cubes. Marinate the chicken for half an hour in Greek yogurt and spices: salt, pepper, parsley, turmeric, cayenne pepper, and onion powder.
- In a large dish, merry breadcrumbs, a tad of salt, parmesan, and garlic powder.
- Pour vegetable oil into a skillet and heat it over medium.
- Coat the chicken into the breadcrumbs mixture and fry them until golden. This will take about 5 minutes, as the chicken chunks are small, and they could dry out.
- Arrange them on a paper towel to absorb residual oil.
Make the Waffles
- In a large bowl, mix wet ingredients: eggs, milk, Greek yogurt, and olive oil.
- Add flour, baking powder, a pinch of salt, chives, sesame, and flaxseeds. Combine all the ingredients so there are no lumps of flour left.
- Spray some oil on your waffle maker and heat it over medium. Pour the batter and bake until golden on top. This could take 5-10 minutes, depending on how strong your gadget is.
Serve
- Serve chicken and waffles with sweet chili sauce (or any other you love). Slice some tomato and butter lettuce salad on the side.
