The red velvet waffles add a special sweetness and texture to the dish, while the chicken brings a savory element. Plus, red velvet waffles are so much more fun than regular waffles! It’s the perfect meal for special occasions or just when you’re in the mood for something a little different.
It’s also an incredibly easy dish to make. With a few simple steps, you can have this delicious meal ready in no time.
The waffles are the star of the show here, and to make 4 of them, you will need the following ingredients:
- 1 ¼ cups Red Velvet Cake Mix – I used Betty Crocker Red Velvet Cake Mix
- 1 tbsp vegetable oil
- ¾ cup milk
- 1 egg
For the buttermilk chicken, you will need the following:
- 4 pieces of chicken breasts
- 1 cup buttermilk
- Salt and pepper to taste
- Seasonings that include ½ tsp dry oregano, ½ tsp paprika, ½ tsp garlic powder, ¼ tsp onion powder, ¼ tsp dry thyme, and ¼ tsp dry parsley
- 3 tsp baking powder
- 1 cup all-purpose flour
In addition, you will need vegetable oil for frying and some maple syrup to pour over the finished meal. Regarding equipment, you will have to use a waffle maker and a deep pan.
Now, let’s get cooking!
Step 1: Preparing the Chicken Breasts
Season the chicken breasts with salt and pepper to taste. Pour 1 cup of buttermilk over it and leave it to marinate for a few hours in the fridge. While the chicken breasts marinate, you should prepare the mixture to cover them before frying.
To do that, combine paprika, powdered onion and garlic, dry oregano, dry parsley, and dry thyme in one bowl, and then add this seasoning mixture to flour and baking powder.
Step 2: Frying the Chicken Breasts
Heat the oil in the pan, but be careful not to be too hot because it will then quickly burn the chicken on the outside while leaving the meat raw inside.
Take the chicken and cover it with flour and seasoning mixture, and then fry it in heated oil for about 5-12 minutes on each side. The frying time depends on the thickness of the piece. Once it is golden brown in color, it’s done.
Place buttermilk chicken on paper towels to soak the extra grease.
Step 3: Making the Waffles
Mix the Red Velvet cake mix with the rest of the ingredients and leave it for 15 minutes for everything to blend nicely. Heat up the waffle maker and bake each waffle for about 2 minutes.
Once the waffles are done, serve chicken on top and pour some maple syrup over them.
What to Serve With Red Velvet Waffles and Chicken?
Now that we know how to make red velvet waffles and chicken, the next question is: What to serve with it?
One option is to keep it simple and just serve it with a side of bacon or sausage. But if you’re looking for something a little more special, I recommend serving it with scrambled eggs or a fruit salad.
Another great option is to serve it as part of a brunch buffet. You could set out a variety of toppings and sides so that your guests can customize their waffles however they want.
No matter how you choose to serve it, red velvet waffles and chicken are sure to be a hit!
How to Store Red Velvet Waffles and Chicken?
If you are not planning on finishing all the food within four days of cooking it, I suggest freezing the components separately in a freezer-safe bag or container for up to three months. When ready to eat, simply allow them to thaw overnight in your fridge before heating as directed above.
Leftovers of red velvet waffles and chicken can be stored in an airtight container or a resealable bag for up to 4 days. When storing leftovers, ensure that all the components – waffles, chicken, and maple syrup – remain separate until it is time to reheat.
To reheat, place the waffle and chicken on a baking sheet and heat in an oven. Once heated, serve with maple syrup as desired.
