The Easiest Fourth of July Cupcakes

Ingredients
For the cupcakes:
- ½ cup (115 g) unsalted butter, softened
- ¾ cup (150 g) granulated sugar
- 2 large eggs, at room temperature
- ¼ cup (60 g) sour cream or full-fat Greek yogurt
- 1½ cups (190 g) all-purpose flour
- 1½ tsp baking powder
- ¼ tsp salt
- ½ cup (120 ml) whole milk
- 2 tsp vanilla extract
For the vanilla buttercream:
- 1 cup (225 g) unsalted butter, softened
- 3½ cups (420 g) powdered sugar, sifted
- 3–4 tbsp heavy cream
- 2 tsp vanilla extract
- Pinch of salt
For decorating:
- Red, white & blue sprinkles or nonpareils
- 12 patriotic cupcake liners
Method
- Preheat and prepare. Heat the oven to 350°F (175°C). Line a 12-cup muffin pan with your patriotic cupcake liners.
- Cream the butter and sugar. In a large bowl, beat the softened butter and sugar together with an electric mixer on medium-high speed for 3–4 minutes, until pale and fluffy. Scrape down the sides of the bowl.
- Add the eggs and sour cream. Add the eggs one at a time, beating well after each. Add the sour cream and vanilla and mix until just combined.
- Add the dry ingredients and milk. With the mixer on low, add half the flour mixture, then all the milk, then the remaining flour.
Mix until just combined and no dry streaks remain — do not overmix or the cupcakes will be tough. - Fill and bake. Divide the batter evenly between the 12 liners, filling each about two-thirds full. Bake for 18–20 minutes, until a toothpick inserted in the center comes out clean and the tops are lightly golden. Do not overbake — they’ll continue to cook slightly in the hot pan.
- Cool completely. Let the cupcakes sit in the pan for 5 minutes, then transfer to a wire rack and cool completely before frosting. This is non-negotiable — frosting warm cupcakes will melt the buttercream.
- Make the buttercream. Beat the softened butter with an electric mixer on high speed for 3–4 minutes until very pale and creamy.
Add the sifted powdered sugar one cup at a time, beating on low after each addition.
Add the vanilla, salt, and 3 tablespoons of heavy cream. Increase to high speed and beat for 2–3 minutes until the frosting is light, fluffy, and silky.
Add the fourth tablespoon of cream if needed to reach a soft, pipeable consistency. - Frost the cupcakes. Transfer the buttercream to a piping bag fitted with a large star tip (a 1M tip gives the classic tall swirl).
Starting at the outer edge of each cupcake, pipe in a spiral motion toward the center, finishing with a little peak. If you don’t have a piping bag, use an offset spatula or the back of a spoon to pile the frosting on generously. - Decorate. Immediately scatter a generous pinch of red, white, and blue sprinkles over each cupcake while the frosting is still soft. Serve at room temperature.
💡 Tip: For the tallest, most dramatic frosting swirl, make sure your buttercream is at the right consistency — it should hold a peak but still be soft enough to pipe without effort. If it feels too stiff, add cream one teaspoon at a time. If too soft, refrigerate for 10 minutes then re-beat.
