The first time I had this delicious butter, I was at a barbecue, and my friend spread it over her grilled chicken. Even though it seemed weird to me at the time, after trying it, I never went back. But I wanted to have a chance to experience this anytime, and I decided to replicate it at home. Now, I get to use it for whatever I like.
How to Make Rastelli Herb Butter?
Rastelli Herb Butter is a delicious spread made of butter and herbs. Still, copying it isn’t that simple, and herbs and butter alone aren’t enough to deliver the flavor that Rastelli offers.
After a considerable amount of time, trial runs, many greasy, buttery surfaces, and many herb pieces collected around my kitchen, I finally got the hang of it. Take a look at this copycat recipe below. This is quite close to the original ingredients list, where I adjusted the amounts and added my own flair, but it works like a charm.

- Unsalted butter – If you want to, you can substitute the butter for pasteurized cream like in the original ingredient list. If you’re using butter, though, make sure it’s softened.
- Fresh parsley, chives, thyme leaves, rosemary – You can substitute the fresh herbs for dry ones or use an herbal blend as a seasoning, though it would be best to choose the fresh options.
- Lemon Juice – It balances out the flavors and adds a dose of freshness. You can use lime if you like it better.
- Minced garlic – It is extremely important that the garlic is minced as finely as possible so it can release its aroma better.
- Salt and pepper
So, let’s get to making your new delicious kitchen staple!
Step 1: Soften the Butter
If you use butter, let it sit at room temperature to soften, but under no circumstances should you melt it. If you use pasteurized cream, you don’t have to worry because it is soft and creamy anyway; just don’t use it straight from the fridge.
Step 2: Mix
Combine the softened butter/ pasteurized cream, chopped herbs, minced garlic, and fresh lemon juice in a mixing bowl. Mix thoroughly until the ingredients homogenize into a single mixture. I have used a blender for this, and I’ve done it by hand; both methods work, but if you mix by hand, prepare for serious work.
In the end, add salt and pepper to taste and blend/mix again for the flavors to distribute equally and balance.
Step 3: Shape
When you are all done, use a spoon to remove the mixture from the blender and place it into a suitable container. You can also use plastic wrap, place it onto it, and shape it into a ball. I prefer the first method, but both work well.
Let the butter chill in the fridge for about an hour before using it. This will allow for the flavors to meld and settle into each other. Or you can make your herb butter into butter pats!
How to Store It?
Store your herb butter in the fridge, as freezing it isn’t an option. I usually take as much as I need, place it in a small bowl, and leave the rest in the fridge. Avoid letting the entire thing sit at room temperature, especially in warm rooms, because it will melt.
You don’t need any special containers; just use the one you transferred the herb butter into after removing it from the blender or mixing bowl.
How to Serve and Eat Rastelli-Like Herb Butter?
There are many ways you can use this delicious spread. When I feel particularly lazy, I just slap it on a warm piece of toast, and I’m done. Still, if you want to make something fancier, you certainly can.
You can have it with grilled meats or roast. Top the meat with a piece of herb butter and let it melt over it. You can spread the herb butter onto the meat while it is still cooking or right after you take it out of the oven or from the grill.
Pair it with veggies, fried, roasted, or grilled; it will enrich them and give them depth and flavor.
You can use a piece in your mashed potatoes, creamed corn, or cream soups, as well as in pasta, dips, and sauces.
