Mediterranean Shrimp Soup: Easy & Quick Recipe

When someone says “Mediterranean cuisine” a few things can definitely come to your mind: olive oil, herbs, lots of fruits, and definitely seafood. Today, I decided to share with you one seafood soup, especially famous in the Croatian area. It is Mediterranean shrimp soup. 

It is a traditional Croatian soup (also called shrimp alla buzara) that is often prepared due to its simplicity and short cooking time. 

You will need just a few ingredients: shrimps, olive oil, garlic, parsley, chopped tomatoes, and white wine. To get the wanted flavor, shrimps should be the head-on, and all vegetables should be fresh. Wine can be slightly sour, even though I prefer the sweet type.

Feel free to make the same recipe using prawns. It will be equally delicious!

When it comes to a side dish for Mediterranean shrimp soup, keep it simple. Many people eat it alone, with boiled potatoes, grilled bread slices, or cornmeal.

How to Clean the Shrimps?

Cleaning the shrimps is easier than it looks. First, you remove the head. Then, you start carefully taking off the shell part by part, starting from the upper part and from the inside where the legs are. When you come to the lowest part of the shrimp, loosen it up a little bit, and then pull the whole tail out.

Pour some water and fresh lemon juice into the separate bowl for cleaning your fingers and to make sure that the smell doesn’t last.

Just remember, cleaning comes after the soup is done. The shrimp’s head is actually to thank for the beautiful flavor of the Mediterranean shrimp soup.

Ingredients
  

  • 2 lbs Head-on shrimp
  • 1/2 cup Olive oil
  • 4 cloves Garlic
  • 1 cup White wine
  • 1 small can Chopped tomatoes Use one store bought can or cut 1 1/2 fresh tomatoes.
  • 3 tbsp Minced fresh parsley

Instructions
 

  • Wash the shrimps.
  • Pour olive oil into one pan and heat it up. When it's warm, add grated garlic, 2 tablespoons of minced parsley, tomatoes and wine.
  • When it starts to boil, add shrimp in and cook them for 15 minutes over low heat.
  • When shrimps are done, add the rest of the parsley and stir.

Notes

Serve Mediterranean shrimp soup with cornmeal, boiled potatoes or grilled slices of bread.
Since you eat the shrimp with your hands, make sure you put one bowl with water and fresh lemon juice on the table. It will help you wash out the smell.
Keep it refrigerated, and eat it within two days.
