Whether you’re a mahi mahi fanatic or trying it for the first time, this recipe will show you just how easy it is to make restaurant-quality fish at home. Let’s get cooking!

Costco Mahi Mahi Cooking Instructions

In the following article, I’ll walk you through how to cook Costco’s mahi mahi filets to flaky perfection. We’ll start by thawing the filets if needed, then move on to a simple pan-searing technique. 

While the fish is cooking, I’ll share some of my favorite sides to serve with it, like coconut rice, mango salsa, and broccoli slaw. Finally, I’ll wrap up with tips for storing any leftovers to enjoy again later in the week.

Step 1: Gathering the Ingredients

To get started, you’ll want to gather some essential ingredients: Mahi mahi filets (I bought a 2-pack from Costco), olive oil, lemon juice, salt, and pepper.

Once you have the ingredients, preheat the oven to 400 °F (200 °C). Line a baking sheet with foil and place the mahi mahi filets in a single layer.

Step 2: Seasoning the Fish

Pat the filets dry with paper towels. Drizzle the fillets with olive oil and season with salt and pepper. Use your hands to coat each filet with the oil and spices gently.

Mahi mahi pairs excellently with citrus, so I also zested one lemon and one lime and sprinkled the zest over the filets. Of course, you can always add herbs and spices of your choosing, like oregano, thyme, and rosemary, as well as some garlic!

Step 3: Preparing the Mahi Mahi

Baking the mahi mahi in the oven is very hands-off and gentle. Place the fish on a foil-lined baking sheet and season as desired. 

Bake for 10 to 15 minutes, until the flesh is opaque and flakes easily with a fork and the internal temperature reaches 145 °F (63 °C). The baking time will depend on the thickness of your filets.

You can also choose to pan-sear the mahi mahi on the stovetop, quickly giving it a nice brown crust. Heat a skillet over medium-high heat and add a bit of oil with a high smoke point, like canola or peanut oil. 

Add the fish skin-side down and cook for 3 to 4 minutes per side until the flesh is opaque and flakes easily with a fork.

When it comes to mahi mahi, you want side dishes that won’t overpower its mild flavor but still provide balance. Some of my favorites are:

Rice: Plain white or brown rice is a simple side that lets the fish shine through. Rice absorbs flavors well, so you can also make garlic, lemon, or vegetable rice.

Vegetables: Asparagus, broccoli, carrots, green beans – choose a crunchy veggie and sauté or roast it. Bell peppers, zucchini, and summer squash also pair great with mahi mahi.

Salad: A light salad tossed in a citrus vinaigrette is perfect. Try arugula, spinach, mixed greens, or a bean salad. Add avocado, tomato, cucumber, and crumbled bacon or cheese sprinkle.

Tropical fruit: For a bit of sweetness, serve fresh mango, pineapple, or papaya. The fruit’s bright acidity contrasts nicely with the mild fish.

Beans and lentils: Black beans, chickpeas, and French lentils are protein-packed sides that are hearty enough for a meal. Season them with chili, cumin, garlic, and lime juice.

Potatoes: Mash some russet potatoes or roast fingerling potatoes with olive oil, salt, and rosemary. Potatoes soak up flavors, and the starch provides balance.

Bread: Grilled bread, cornbread, rolls, or tortillas are simple but filling. Brush the bread with garlic-herb butter or wrap the fish in lettuce leaves or tortillas.

How to Store Leftovers?

Now that you’ve enjoyed your delicious mahi mahi, it’s time to think about storing any leftovers properly. As with any fish, mahi mahi leftovers don’t last long, so you’ll want to eat them within 1 to 2 days. Refrigerate immediately

As soon as you’re done eating, transfer any leftover mahi mahi to an airtight container or sealable bag and place it in the refrigerator. Don’t leave it sitting out, which can lead to bacterial growth.

If you marinate your mahi mahi before cooking, do not store the leftovers in the same marinade. The marinade contains acids and can continue to “cook” the fish and make it mushy. Drain the marinade and only refrigerate the leftover fish.

If you have a lot of leftover mahi mahi and want to freeze some for longer storage, here’s how:

  1. Place the mahi mahi in an airtight container or sealable freezer bag and remove as much air as possible before sealing.
  2. Label and date the package and freeze it for up to 3 months.
  3. When ready to eat, thaw the mahi mahi in the refrigerator overnight.
  4. Use immediately after thawing, and do not re-freeze.
