  • 21 oz sweet potatoes about 2 medium (600 g)
  • 7 oz dark chocolate or cooking chocolate (200 g)
  • 3.5 oz butter 100 g
  • 4 eggs
  • 3.5 oz brown sugar 100 g
  • 3.5 oz rolled oats ground into flour (100 g)
  • 2.8 oz almond flour 80 g

Instructions
 

  • Start by preparing the sweet potatoes. Peel, wash, and cut them into cubes. Boil the sweet potatoes for about 15 minutes until they are soft. Drain and mash them into a smooth puree. Let the puree cool.
  • While the sweet potatoes are cooling, melt the dark chocolate and butter together using a double boiler. Stir until smooth and set aside to cool.
  • Preheat your oven to 350°F (180°C). Grease a deep baking pan with a thin layer of butter.
  • Grind the rolled oats into a fine flour using a blender.
  • In a large bowl, whisk the eggs and brown sugar together until combined. Add the cooled sweet potato puree and melted chocolate mixture, and whisk until smooth.
  • Add the oat flour and almond flour to the wet ingredients and mix until everything is well combined.
  • Pour the batter into the greased baking pan, spreading it out evenly. Bake for 25 minutes at 350°F (180°C).
