  • 1 large seedless watermelon (about 4–5 kg / 9–11 lbs)
  • 400 g (14 oz) block feta cheese
  • 300 g (2 cups) fresh blueberries
  • Small handful of fresh mint leaves (for the base layer)
  • 2 tablespoons honey
  • Juice of 1 lime

Method

  1. Prepare the watermelon. Cut the watermelon in half, then slice off the rind. Cut the flesh into uniform 2 cm (¾ inch) cubes. Pat gently with paper towels to remove excess moisture — this helps keep the platter from going soggy.
  2. Cube the feta. Slice the block feta into similar-sized 2 cm cubes. Handle gently so the pieces hold their shape.
  3. Prep the blueberries. Rinse and dry the blueberries thoroughly.
  4. Scatter the mint base. Scatter a thin layer of leaves over the serving platter first — it adds fragrance and a pop of green peeking through.
  5. Lay the watermelon base. Cover the entire platter with a single, even layer of watermelon cubes. This forms the background of your flag.
  6. Create the blue canton. In the upper left corner of the platter, pile the blueberries into a neat rectangle — this is your star field.
  7. Add the white stripes. Arrange rows of feta cubes in horizontal lines across the right two-thirds of the platter, creating 3–4 evenly spaced white stripes running across the red watermelon.
  8. Finish and serve. Drizzle lightly with honey and a squeeze of lime juice over the top. Serve immediately, or refrigerate uncovered for up to 1 hour before serving.
