Overeating gets treated as a personal failing more often than it gets treated as an engineering problem. Recent research suggests the second framing might actually be closer to the truth.
A Controlled Study Finally Proved What Was Only Suspected
In 2019, NIH researcher Kevin Hall ran the first randomized controlled trial testing ultra-processed foods directly against minimally processed ones. Twenty adults lived at the NIH’s clinical hospital for a month, eating as much or as little as they wanted from meals matched exactly for calories and macronutrients.
The result was stark: people eating the ultra-processed diet consumed over 500 more calories a day than when eating the unprocessed one. It was the first study to demonstrate actual causality, not just a correlation, between processed food and overeating.
The Industry Has a Name for the Perfect Combination
Food scientists use the term “bliss point” to describe the precise ratio of sugar, fat, and salt that maximizes how enjoyable a food feels without tipping into overwhelming. It’s engineered deliberately, not discovered by accident.
That combination hits the brain’s reward circuitry harder than whole foods typically do, creating something closer to a compulsion than an ordinary craving. It’s part of why a single chip rarely feels like enough.
Some Foods Are Built to Barely Require Chewing
Many snack foods derive around half their calories from fat, which creates a texture that melts almost instantly in the mouth. That quick dissolve is sometimes called vanishing caloric density, since the brain has a harder time registering how many calories just went down.
Foods that require real chewing and digestion tend to signal fullness more reliably. A food engineered to disappear almost immediately short-circuits that natural feedback loop.
More Than Half of the Food Supply Now Qualifies as Hyperpalatable
Researchers at the University of Kansas developed the first measurable definition of hyperpalatable food, built around specific combinations of fat, sugar, sodium, and carbohydrates. Applying that definition to the U.S. food supply found that 62 percent of available foods qualify.
That’s a majority of what’s actually stocked on shelves, not a fringe category of obvious junk food. Foods marketed as healthier alternatives often still meet the same hyperpalatable criteria once one ingredient gets swapped for another.
It’s Not About Willpower, It’s About Design
Researchers studying this phenomenon have been direct that the resulting overeating isn’t a matter of personal discipline. These foods are built specifically to be difficult to stop eating, activating reward pathways far more intensely than a piece of fruit or a bowl of rice ever would.
That reframing matters, since blaming an individual for reacting exactly the way a product was engineered to make them react misses where the actual problem sits.
Recognizing the Pattern Is the First Real Defense
None of this requires eliminating every packaged food from a kitchen to make a difference. Simply noticing which foods disappear fast, taste engineered rather than genuinely flavorful, or leave a craving for more almost immediately is a useful signal worth paying attention to.
Building meals around whole, minimally processed ingredients most of the time doesn’t require perfection to matter. It just removes some of the products specifically designed to make stopping at a reasonable portion so much harder than it should be.
