Jessica Chastain built a career playing intense, controlled characters, and it turns out her own diet runs on a surprising amount of discipline too. Her approach to eating shifted dramatically after a health scare most people would never guess by looking at her.
Somewhere in that shift, she picked up one particularly unconventional habit, a day each week where solid food barely enters the picture at all. It started as a personal experiment and turned into something she has stuck with for years.

A Diet Change That Started By Accident
Chastain became vegetarian in the early 1990s, but persistent high cholesterol followed her for years afterward. Rather than start medication, she decided to test whether food alone could fix the problem.
A friend suggested trying a fully vegan diet for two weeks, largely on a whim. “I just had more energy than I’ve ever had in my life,” Chastain told W Magazine of that trial run.
The change also resolved her cholesterol issue without any medication involved. She has said she even briefly reintroduced fish afterward, felt sick again almost immediately, and decided the vegan diet was staying for good.
The One Day A Week She Skips Solid Food
The most unusual piece of Chastain’s routine is a green juice fast she does every single Monday. Rather than eating regular meals, she sticks to juice for the entire day as a kind of weekly reset, according to a breakdown from Rachael Attard.
She has been clear that she does it because it genuinely makes her feel good, not because she thinks everyone should copy it. For Chastain, the ritual doubles as a moment to slow down and reflect at the start of a demanding week.
What Actually Fills Her Plate The Rest Of The Time
Outside of that one day, Chastain’s diet looks a lot more like traditional home cooking than anything extreme. She favors soups, stews and roasted vegetable dishes for dinner, along with the occasional homemade banana pancakes on weekends.
She also trained at New York’s Natural Gourmet Institute, giving her cooking skills well beyond simply avoiding certain ingredients, according to a report from Yahoo. She cooks without oil when she can and leans on a cast iron skillet, partly to pick up extra iron in a diet that otherwise skips meat.
For all the attention her Monday juice fast gets, most of Chastain’s actual fuel still comes from fairly ordinary vegan cooking. The real story is less about skipping traditional food altogether and more about one deliberate, weekly break from it.
