Ingredients
  

  • 2 cans red beans drained (about 920 g drained weight)
  • 2 tbsp oil
  • 1 yellow onion chopped
  • 2 carrots sliced
  • 1 red bell pepper chopped
  • 4 sausages
  • 1.8 oz bacon 50 g
  • tsp salt
  • 1 tsp chili powder
  • tsp black pepper
  • 1 tsp chopped parsley
  • ½ tsp smoked paprika
  • 2 tbsp roasted red pepper paste
  • 2 cups tomato passata 500 ml

Instructions
 

  • Finely chop the onion, slice the carrots into rounds, and chop the red bell pepper into cubes.
  • Heat the oil in a skillet over medium heat and sauté the chopped onion until translucent. Add the carrots and bell pepper, cooking for about 10 minutes until softened. Add a little water if necessary to prevent burning.
  • Preheat the oven to 375°F (190°C).
  • While the vegetables are cooking, drain and rinse the beans, slice the sausages into rounds, and chop the bacon into small pieces. Add these to a deep baking dish.
  • Add the chopped parsley, red pepper paste, seasonings, tomato passata, and sautéed vegetables to the baking dish. Mix everything together well.
  • Bake in the preheated oven for 35 minutes, or until the surface is golden and slightly caramelized.
  • Serve warm and enjoy!
