For the Salad:

  • 1 can chickpeas drained (about 1½ cups)
  • can corn drained (about ⅔ cup)
  • ½ red onion finely chopped
  • 1 carrot grated (about 4.2 oz)
  • 2.8 oz celeriac root grated (80 g)

For the Dressing:

  • 4 tbsp extra virgin olive oil
  • 2 tbsp apple cider vinegar
  • tsp salt
  • tsp black pepper
