Creamy Broccoli and Cauliflower Soup

- ½ cauliflower about 7 ounces
- 1 broccoli about 13.5 ounces
- 2 tablespoons oil
- 1 onion
- 2 carrots
- Small piece of celeriac
- 6 cups water
- 2 teaspoons salt
- 1 pinch pepper
- 7 ounces heavy cream
Instructions
- Heat oil in a pot and add chopped onion. The onion doesn’t need to be finely chopped as you will blend it later. Lightly salt it to start the softening process.
- Add chopped carrots and celery. If needed, add a little water and sauté for about 10 minutes.
- Add the chopped broccoli and cauliflower to the pot.
- Pour in boiling water, add salt and a bit of pepper, and cook for another 15-20 minutes until the vegetables are tender.
- Turn off the heat and stir in the heavy cream.
