Kate Beckinsale has spent decades doing her own stunts in the Underworld franchise, a career that demands a level of physical conditioning most actors never have to think about. Behind the intense workouts, though, is a set of eating habits that’s surprisingly specific about what stays on the plate and what gets cut entirely.

Protein Before Anything Else

Beckinsale has said she always starts with protein before a workout, usually chicken or eggs cooked with grass-fed butter. It’s a habit she’s kept consistent enough that Women’s Health highlighted it as the anchor point of her entire daily approach to eating.

That early protein sets the tone for the rest of the day, which tends to lean heavily on real food rather than shakes or bars. It’s a fairly unglamorous routine for someone whose physique gets so much attention, built more around consistency than any single trick.

A Salad Built Around Crunch and Healthy Fat

Later in the day, Beckinsale typically reaches for salmon alongside a salad built from brussels sprouts, radishes, and safflower oil. One outlet summarized her go-to plate as chicken or eggs with grass-fed butter, followed by that same salad and salmon later on, a combination she returns to often enough that it reads more like habit than meal planning.

The choice of safflower oil over something more common like olive oil is a small detail, but it fits her broader pattern of picking specific fats rather than defaulting to whatever’s easiest. Nothing about the plate looks restrictive, just consistent.

The Foods She’s Completely Cut Out

Unlike a lot of “everything in moderation” celebrity diets, Beckinsale has been direct about a short list of hard no’s. She’s cut out caffeine and alcohol entirely, along with dark chocolate, explaining that some people’s systems are just sensitive to certain things regardless of how healthy those foods are generally considered.

She also actively limits carbs and processed sugar, saying both tend to leave her feeling bloated and sluggish rather than energized. It’s less about following a trend and more about noticing a direct, personal cause and effect.

From Vegetarian to Protein-Focused

Beckinsale wasn’t always built around protein-heavy meals. She was vegetarian for a stretch earlier in her life, but found the diet didn’t give her enough energy to sustain the intensity of her workouts, which is what eventually pushed her toward adding fish and chicken back in.

That shift says something about how practical her approach to food really is. Rather than sticking to a label out of principle, she adjusted once the vegetarian diet stopped matching what her body actually needed to perform.

Room for the Occasional Cupcake

Despite the discipline, Beckinsale has pushed back against the idea that she’s chasing an impossible standard. She told British Elle she isn’t “aiming to be Gisele” and would hate to be someone who never allows herself a slice of birthday cake, adding that if someone shows up with cupcakes in the afternoon, she’ll have one.

That mix of structure and flexibility seems to be the real throughline in how she eats. The hard no’s stay firm, but everything else leaves room for a treat without turning into an exception that derails the rest of the week.
