Ingredients
  

  • 1 medium zucchini
  • 1 cup cottage cheese
  • 2 eggs
  • 2 teaspoons of chives
  • ½ cup flour
  • ½ teaspoon garlic powder
  • 1 teaspoon salt
  • teaspoon pepper

Instructions
 

  • Preheat the oven to 400°F (200 °C) so it can warm up while you prepare the mixture.
  • Thoroughly wash the zucchini, trim the ends, then grate and salt with half a teaspoon of salt (save the rest of the salt for the mixture). Leave them for 10-30 minutes to release water.
  • In a small bowl, whisk the eggs. Add cheese, spices, and finely chopped chives and combine.
  • Gradually mix in the flour.
  • Finally, incorporate the zucchini that you have drained of water by squeezing it between your palms.
  • After lining a large baking tray with parchment paper, shape 9 patties.
  • Place them in the oven for 15 minutes, turn them over and return them for another 15 minutes.
