Anti-aging skincare gets all the attention, with serums and creams promising smoother skin in a jar. This year though, one of the more talked about anti-aging habits has nothing to do with your bathroom cabinet.

The trend centers on something called advanced glycation end products, or AGEs for short, compounds that form when food is cooked at high heat with little moisture. Grilling, roasting and baking all generate higher amounts of these compounds compared to gentler methods.

Steaming, boiling and poaching, on the other hand, keep AGE levels much lower. Swapping one cooking method for another, without changing a single ingredient, can apparently make a real difference.

A randomized study recently found that people following a diet built around low heat cooking methods had noticeably lower AGE levels in their blood compared to those eating the exact same ingredients cooked with high heat. Researchers also saw improvements in participants’ lipid profiles during the trial.

That kind of controlled result is rare for a trend that started gaining traction online. It is part of why this one managed to catch the attention of scientists instead of just food influencers.

A Few Small Tweaks Make A Big Difference

You do not have to give up your oven or grill entirely to see a benefit here. Simply marinating meat in lemon juice or vinegar for about an hour before cooking has been shown to cut AGE formation roughly in half.

Even small changes like scrambling eggs on lower heat instead of blasting them on high can lower the amount your body ends up absorbing. None of these swaps require special equipment or a trip to a specialty grocery store.

Why This One Actually Has Experts On Board

Plenty of viral food trends fade quickly once people realize they were built more for likes than actual benefits. This one has held up differently, with nutrition researchers pointing to it as a genuinely useful, low effort change.

It also does not ask anyone to eliminate entire food groups or follow a rigid meal plan. That may be exactly why it managed to stick around this summer instead of quietly disappearing like so many trends before it.

So if your idea of an anti-aging routine has only ever involved skincare, it might be worth glancing at your stovetop too. Sometimes the simplest swap is the one that actually holds up to scrutiny.
