Ingredients
  

  • 3 medium zucchini
  • 2.8 oz gouda cheese grated
  • 1.1 oz parmesan cheese grated
  • 1 tsp garlic powder
  • 2 eggs
  • 1/2 tsp salt + 1 tsp for zucchini
  • 1.8 oz almond flour

Toppings

  • 4.4 oz mozzarella grated
  • 3.5 oz gouda cheese grated
  • 1 spring onion thinly sliced

Instructions
 

  • Grate the zucchini and sprinkle with 1 tsp salt. Let it sit for at least 30 minutes to draw out moisture. Squeeze the excess water out using a kitchen towel.
  • Preheat the oven to 450°F. Line a baking sheet with parchment paper.
  • Mix the grated zucchini, gouda, parmesan, garlic powder, eggs, 1/2 tsp salt, and almond flour until well combined. Spread the mixture thinly over the parchment paper.
  • Bake in the preheated oven for 20-25 minutes until golden and firm.
  • Sprinkle the baked base with mozzarella and the additional gouda. Return to the oven and bake for another 6-8 minutes until the cheese is bubbly and slightly golden.
  • Cut into breadsticks and garnish with thinly sliced spring onion.
