High-Protein Peanut Butter Banana Overnight Oats

Overnight oats are one of the only meal-prep things that survives contact with my actual life. I make a batch of four or five jars on Sunday, they sit in the fridge, and for the rest of the week breakfast is already handled before anyone’s even asked me where their shoes are.
This version started because my older two are both lifting now, and “eat more protein” turned into a full campaign in my house. Adding a scoop of protein powder to oats is nothing new, but most of the time it turns into an argument between the oats and the powder over who gets to be the flavour.
Peanut butter and banana already taste like dessert. The last thing that combination needs is a vanilla or chocolate protein muscling in and making the whole jar taste like a shake instead of breakfast.
That’s the actual reason I use an unflavoured protein for this one instead of just grabbing whichever tub is closest.

What you’ll need (makes 4 jars)
- 2 cups old-fashioned rolled oats
- 2 scoops (about 62g) unflavoured whey protein powder
- 2 1/2 cups milk of your choice (dairy or plant-based both work)
- 1/2 cup plain yogurt
- 1/3 cup natural peanut butter, plus extra for topping
- 2 ripe bananas, mashed, plus extra sliced for topping
- 2 tablespoons maple syrup or honey
- 1 teaspoon vanilla extract
- Pinch of salt
- Mason jars or containers with lids
How to make it
- In a large bowl or measuring jug, whisk the protein powder into the milk first, before adding anything else. This is the step people skip and then wonder why they’ve got little clumps at the bottom of the jar.
- Add the yogurt, mashed banana, peanut butter, maple syrup, vanilla, and salt. Whisk until smooth and the peanut butter has fully combined into the liquid.
- Stir in the oats until they’re fully coated.
- Divide evenly between jars, cover, and refrigerate overnight, or at least four hours.
- In the morning, give each jar a stir. Top with sliced banana, an extra spoonful of peanut butter, and whatever else is in the pantry, chopped peanuts, a drizzle of honey, a few chocolate chips if it’s that kind of morning.
Jars keep well in the fridge for up to four days, which means one prep session covers most of the week. If the mixture thickens up more than you like after a day or two, a splash of milk stirred in loosens it right back up.
A few swaps
If peanut butter isn’t your thing, almond or sunflower seed butter works the same way. For a thicker, more pudding-like texture, use less milk and more yogurt. And if you’re making these for kids who are picky about texture, a quick pulse in the food processor before dividing into jars breaks the oats down further without turning it into mush.
Why this one stuck
I’ve made a lot of overnight oats that taste fine and get eaten because they’re what’s in the fridge. This is one of the few that gets requested by name, which in my house is the actual bar for whether a recipe earns a permanent spot in the rotation.
