Healthy Oven Baked Zucchini Fritters
Ingredients
- 1 medium-sized zucchini
- ½ teaspoon salt for the zucchini
- 1 egg
- ⅓ cup ground oat flakes
- ½ teaspoon granulated garlic
- ⅔ cup shredded Cheddar cheese
- 1 tablespoon chopped chives
- 1 tablespoon olive oil
- ¼ teaspoon salt
Instructions
- First, preheat the oven to 400°F. Line a baking tray with parchment paper.
- Wash the zucchini, trim the ends, and then grate it. Season with half a teaspoon of salt, mix, and leave it to release water (between 10 and 30 minutes). After that, thoroughly drain the zucchini by squeezing it between your palms.
- In the meantime, you can prepare the other ingredients. Grind the oat flakes in a blender (or use oat flour). Grate the Cheddar cheese, and finely chop the chives.
- After combining all the ingredients in one bowl, use a spoon to form 5-6 patties on the tray.
- Place the patties in the oven for 15 minutes, flip them, and then return to the oven for another 15 minutes.
- Serve the warm patties with cheese spread or Greek yogurt. Enjoy your meal!
