This is a quick and easy dinner to whip up, plus it is loaded with micronutrients! Just fill jicama wraps with hummus, English cucumber, Romaine lettuce, carrots, bell peppers, avocado, and lots of spices!
Baked Chile Rellenos
This is a spicy, rich dish you will love! Black beans are a superb option for filling, as they are hearty and filling, plus they pair well with roasted poblano peppers. The spice selection is top-notch!
Avocado Cucumber Salad
This is probably the most filling salad you can have, as it is loaded with avocado. English cucumber and green onions give the refreshing smack and some crunchiness. It pairs well with fish and meat flawlessly!
Sopa de Verduras – Mexican Vegetable Soup
This soup is just what its name says – loads of veggies cooked in hearty broth. It is a mix of carrots, celery, onion, green beans, corn on the cob, cabbage, potatoes, zucchini, and broccoli, plus loads of herbs and spices – simply perfect for colder days.
Pipian Verde
This green sauce has rich, deep flavors that skyrocket the taste of something as simple as chicken drumsticks. It has a super interesting ingredient selection: tomatillos, poblanos, radishes, romaine lettuce, pepitas, sesame seeds, peanuts, cumin seeds, black peppercorns, and garlic.
Salsa Verde Chicken Enchiladas
The best part of this dish is a homemade tomatillo salsa with serrano chili peppers, lime, and cilantro. Tomatillos are actually super rich in antioxidants, while chicken is one of the finest lean protein sources you can have!
Caldo De Pollo – Mexican Chicken Soup
This soup is a micronutrient heaven because of a whole bunch of different veggies – carrots, potatoes, corn, and zucchini. It is also very low in fat content, as it only calls for chicken and a drizzle of olive oil.
Nopales Asados Tacos
Nopales or cactus paddles are definitely a special ingredient, rich in antioxidants, high in fiber, and low in calories. Just stuff your corn tortillas with more goodies like avocado, tomatoes, salsa, and cotija cheese.
Healthy Air Fryer Tortilla Chips
Everyone knows tortilla chips are delish, but it is not the healthiest option out there. However, these are air-fried and definitely a better option! Coat your favorite tortillas in any spice blend you fancy, serve some guac or salsa, and call it a day!
Ensalada de Nopales
This is one more dish with nopales cactus paddles in the main role. You need to simmer the cactus for about ten minutes to get rid of the excessive slimy liquid. Toss in the rest of the ingredients, and there you have it – an incredibly refreshing side dish!
Sopa de Lentejas – Lentil Soup
Lentil soup is a protein powerhouse, especially if you add some meat. This recipe calls for spicy sausage, but you can go for lean beef or pork instead. I usually make a vegan variety, and it is FABULOUS!
Black Bean Pozole
Pozole, aka hearty Mexican soup, is one of the most famous dishes that is made with hominy! Hominy is a fine fount of fiber and B vitamins, especially when you pair it with black beans, like in this case.
Healthy Chicken Fajitas
These fajitas are low-carb keto-friendly, as the recipe asks for lettuce instead of regular tortillas. Slice some chicken breasts, multicolor bell peppers, and an onion, coat them in spices, and sauté till cooked through. I like sour cream on top, too!
Healthy Low-Carb Grilled Fish Tacos
If you never had fish tacos before, this is your sign to change that! The seasoning for the white fish here is simple, but you definitely need nothing more to make its natural flavors bloom. Add some veggies and hot sauce for the kick!
Shrimp Ceviche
This dish is a true delicacy, but it is actually super easy to whip up. The key is letting the raw shrimp marinate in lime juice for several hours, so you don’t need to process it thermally at all. Add some veggies, and your protein-rich lunch is ready!
