Hearty Boiled Beef with Vegetables Recipe
Boiled beef with vegetables is one of the simplest dishes you can make! Just prepare some water, chop your veggies, add the ingredients one by one, and let it cook while you relax. Sounds tempting, right? Best of all, you have everything in one: both the main dish and the side.
As for the choice of meat, I recommend marbled cuts like the round or shoulder. When it comes to vegetables, feel free to add whatever you like and have on hand. I saved the liquid in which the meat and vegetables cooked in the freezer to use as a broth another time.
We didn’t eat it as soup due to the large amount of salt and seasoning in that amount of liquid. However, I wouldn’t reduce the amount of seasonings because they’re essential for the flavor of the meat and vegetables.

Boiled Beef with Vegetables
Equipment
Ingredients
- 1.5 lbs 700 g beef round or shoulder
- 2 teaspoons salt
- 2 teaspoons Vegeta seasoning or all-purpose seasoning
- 1/4 teaspoon black pepper
- 2 bay leaves
- 1 yellow onion
- 1 parsley root
- 2 carrots
Instructions
Prepare the Pot
- Fill a large pot with water and bring it to a boil.
- Once boiling, add salt, Vegeta seasoning, black pepper, bay leaves, and beef. Remember to wait until the water boils before adding the meat.
Cook the Beef
- Let the beef cook on low heat for 1 hour.
- While it’s cooking, slice the carrots and parsley root into rounds, and cut the onion into strips.
Add the Vegetables
- After the first hour, carefully add the vegetables to the pot.
- Continue to cook everything together on low heat for another hour.
Rest and Slice the Meat
- After the second hour, both the meat and vegetables should be cooked.
- Remove the meat from the pot and let it rest on a cutting board for about 10 minutes before slicing.
Serve
- Slice the meat into pieces about half an inch thick.
- Serve immediately. If you’re serving later, you can return the meat to the cooking liquid to keep it juicy.
Save the Broth
- The liquid in which the meat and vegetables cooked is quite salty, so it’s not recommended to serve it as soup.
- Instead, strain it into a container, store it in the freezer, and use it as a broth base in future recipes. Enjoy!
Notes

Seasoning: The amount of seasoning is important for the flavor. Adjust to your taste, but keep in mind it enhances the meat and vegetables.
