A 60-Year-Old Fitness Coach Swears by This 3-Ingredient Breakfast for Endless Energy

Plenty of people assume that feeling sluggish by mid-morning is just part of getting older. More coffee, a pastry from the break room, and a quiet hope that lunch comes early tend to fill the gap.
One fitness coach with more than a million followers says the fix starts much earlier in the day. Her breakfast is so consistent that she barely has to think about it, and she credits it with keeping her energized and full for hours.
The Coach Behind the Routine
Karen Brown is a certified health coach and fitness instructor who built a large following on social media by sharing easy ways to stay fit later in life. Her brand, Easy Fitness Over 50, focuses on simple habits rather than extreme programs.
In an interview with Parade, she said she’s never felt healthier. A big part of that, she explained, comes down to a short list of food rules and a breakfast she repeats nearly every day.
What’s on Her Plate
Brown starts her morning with two boiled free-range eggs. They’re easy to prep ahead, travel well, and deliver a solid hit of protein before the day gets busy.
Alongside the eggs, she drinks a smoothie made with wild blueberries, MCT oil, chia seeds, flaxseed, and an organic protein powder with fermented greens. She also blends in a daily greens formula that includes sea greens, low-glycemic fruit, prebiotics, and probiotics.
Why Protein Comes First
The main reason she sticks with this combo is staying power. Between the eggs, the protein powder, and the seeds, the meal delivers enough protein to keep her full and energized well into the morning.
Eggs bring more than protein, too. They also supply unsaturated fats and vitamin D, which makes them one of the more nutrient-dense ways to start the day for very little effort.
Blueberries Do More Than Add Flavor
Wild blueberries give the smoothie its sweetness without relying on a pile of high-sugar fruit. They’re also rich in antioxidants that have been linked to heart and brain health.
Brown is careful about how her smoothie is built. She has warned that smoothies made mostly from fruit can turn into sugar bombs, so she leans on greens, seeds, and protein to keep it balanced.
Healthy Fats Round It Out
Chia seeds and flaxseed add fiber, plant protein, and omega-3 fats, which help slow digestion and keep hunger in check. They also give the smoothie a thicker, more filling texture.
MCT oil adds another source of fat to the mix. Paired with the eggs, it helps turn what could be a light drink into a breakfast that genuinely holds her over until lunch.
Her Approach to Carbs
Brown follows a primal style of eating, which is similar to Paleo. It centers on vegetables, fruit, quality animal protein, nuts, seeds, and healthy oils, while cutting back on grains, sugar, and ultra-processed foods.
She says she personally feels better without bread and many grains, and that her menopause symptoms and belly fat improved after she dropped them. That’s her own experience rather than a rule that works for everyone, and many people do well with whole grains in their diet.
The Breakfast Mistake She Sees Most
As a health coach, the habit Brown warns against most is starting the day with sugary, highly processed cereal. She says it’s a reliable way to send energy crashing before the morning is over.
Her alternative isn’t complicated. Building breakfast around protein, healthy fats, and fiber, while keeping added sugar low, leaves plenty of room for variety, whether that’s eggs, Greek yogurt, or a balanced smoothie.
She Stops Eating Early Too
Breakfast is only one piece of her routine. Brown also avoids eating after 5:30 in the evening, giving her body a long overnight break before her morning meal.
She calls it a game changer for her own energy and weight. Research on early time-restricted eating is still developing, so it’s worth treating as an option to test rather than a must, especially for anyone with diabetes or other health conditions who should check with a doctor first.
