A Delicious (and Cheap) Dish We Make When We Don’t Have Much Time

Some nights the fridge is nearly empty, the day has been long, and cooking anything complicated just isn’t happening. This is the dish we reach for on those nights, garlic butter pasta with Parmesan and crispy breadcrumbs, and it’s saved dinner more times than we can count.

Why We Make This When We’re Short on Time

Almost everything in this recipe is something we already have on hand, pasta, butter, garlic, and Parmesan aren’t exactly rare pantry items. That means there’s no last-minute grocery run required, even on the nights we haven’t planned ahead at all.

It also comes together in about the time it takes to boil a pot of pasta, which is honestly the whole appeal. There’s no complicated technique involved, just a handful of simple steps that somehow add up to something that tastes far more impressive than the effort it actually takes.

What You Need

  • 12 oz spaghetti or linguine
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1/2 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons chopped fresh parsley
  • Salt and black pepper, to taste

How We Make It

We start by cooking the pasta in a large pot of salted boiling water until it’s just short of al dente, reserving about a cup of the pasta water before draining. While the pasta cooks, we melt half the butter in a separate skillet over medium heat and toast the panko breadcrumbs until golden and crisp, stirring often so they don’t burn.

Once the breadcrumbs are toasted, we set them aside in a bowl and wipe out the skillet. Then we melt the remaining butter in the same pan, add the garlic, and cook it for about a minute, just until it’s fragrant but not browned.

From there, we add the drained pasta straight into the skillet along with a splash of the reserved pasta water, tossing everything together so the starchy water helps the butter cling to the noodles.

We stir in the Parmesan a little at a time, adding more pasta water as needed until the sauce turns glossy and coats every strand.

Right before serving, we season with salt, pepper, and red pepper flakes if we’re using it, then plate the pasta and finish it with a generous scoop of the toasted breadcrumbs, extra Parmesan, and a sprinkle of fresh parsley on top.

Tips for Making It Even Better

If there’s leftover cooked chicken, bacon, or even canned white beans in the fridge, this is a great dish to fold them into for a little extra substance. A squeeze of lemon juice at the end also brightens everything up if the dish feels a bit too rich on its own.

The breadcrumbs are really what take this from ordinary garlic butter pasta to something worth repeating, so we try not to skip that step even on the busiest nights.

It only takes a few extra minutes, and the crunch on top makes the whole dish feel a lot more intentional than a five-ingredient pantry dinner has any right to.
