This is less a recipe and more a no recipe meal, since the only real rule is to use whatever is fresh. Start with a base of greens, then add a protein like canned tuna, sliced deli turkey, or leftover rotisserie chicken.

From there, pile on whatever vegetables are sitting in the crisper, think cherry tomatoes, cucumber, avocado, and shredded carrots, then finish with cheese, nuts, or croutons for crunch. A simple olive oil and vinegar dressing ties it all together, and dinner is ready in the time it takes to chop.

The only heat this dish needs comes from a pot of boiling water for the noodles. Cook spaghetti or soba noodles, then rinse them under cold water so they stay cool and do not stick together.

None of these meals ask you to stand over a hot stove for very long, and a couple of them do not ask you to cook at all. That is really the whole point of summer dinner, less time in the kitchen and more time enjoying the season.
