  • 3 tbsp powdered sugar
  • 1 tsp vanilla extract
  • 500 g (about 1 lb) fresh strawberries, hulled and sliced
  • 200 g (about 7 oz) fresh blackberries
  • White star sprinkles
  • 2 miniature American flag picks

Method

  1. Make the waffle batter. Whisk together the flour, baking powder, sugar, and salt in a large bowl. In a separate jug, whisk the eggs, milk, melted butter, and vanilla. Pour the wet ingredients into the dry and stir until just combined — a few lumps are fine. Rest the batter for 5 minutes.
  2. Cook the waffles. Preheat your waffle iron and grease it lightly. Cook the batter in batches until golden and crisp. Keep finished waffles warm in a low oven (200°F / 90°C) on a wire rack.
  3. Whip the cream. Using a hand mixer or stand mixer, beat the heavy cream with the powdered sugar and vanilla until soft, billowy peaks form. Stop before it goes stiff.
  4. Arrange the waffles. On a large rectangular board or serving platter, arrange the waffles side by side to form a rectangle — roughly 3 wide and 2 deep, trimming to fit neatly if needed.
  5. Apply the whipped cream. Spread the whipped cream evenly over the entire surface in a smooth, generous layer.
  6. Build the flag. Cluster the blackberries in the upper-left corner and scatter white star sprinkles over them. Then lay rows of sliced strawberries horizontally across the rest of the surface, leaving thin gaps of white cream showing between each row to form the stripes.
  7. Finish and serve. Press the flag picks into the top. Slice down through the layers so each portion gets waffle, cream, and fruit, and serve right away.
