What Sugar Does to the Body, According to Him

His reasoning is not casual. Speaking to Fox News Digital in 2026, Dr. Oz was blunt: it is not eating fat that makes you fat, it is sugar, because the body processes it and stores it directly for future use.

He groups sugar alongside white flour and white rice as what he calls “the white foods,” saying all of them tend to create obesity by acting as simple carbohydrates that spike blood sugar and get deposited as fat.

The Heart Surgeon Who Saw It All Firsthand

This conviction did not come from a wellness trend. It came from operating rooms. In an interview shared on Oprah.com, Dr. Oz described how he assiduously avoids simple sugars and explained the connection between what patients eat and the damaged hearts he spent his career trying to repair.

He has said he witnesses the impact of unhealthy eating every day as a cardiac surgeon, describing the real consequences of poor habits he saw play out on the operating table across a career that spanned decades.

High-Fructose Corn Syrup Gets Its Own Category

Sugar in its pure form is one thing, but Dr. Oz has long reserved a particular frustration for high-fructose corn syrup. On his show and via Oprah.com, he explained that the body processes it differently from regular sugar, specifically by blocking leptin, the chemical that tells your brain you are full. The result is that you eat more without ever realizing it.

It is, by his description, not just a source of empty calories. It is a hormone disruptor hiding inside seemingly ordinary foods.

What He Eats Instead

His actual daily meals are surprisingly simple. His wife Lisa is a vegetarian, so the Oz household runs on vegetables, greens, and clean proteins. Broccoli rabe, corn, squash puree soup, and arugula salads are regulars at his table.

When a craving hits, his emergency snacks are apples, carrots, nuts, and a glass of vegetable juice, none of which come close to a sugar label. For someone who has seen what the alternative looks like from the inside of a chest cavity, the choice makes perfect sense.
