What to Serve with Costco Salmon? [8 Fulfilling Ideas]
Costco salmon is one of my favorites at Costco, and since I buy it in batches, I make it very often. I like salmon even with nothing on the side, but it sure is nice to serve it with something delicious that pairs perfectly.

Roasted Asparagus
Roasted asparagus is not only ultra-healthy but also a particularly delicious and compatible side for Costco salmon. The buttery and soft fish pairs deliciously with the crunchy vegetable, creating a texture contrast topped only by the abundant tasting tones.
I like to smear some mustard on my salmon and top it lightly with lemon juice, as the bitterness and sourness bring out the natural salmon flavors even more. If you like experimenting, you can drizzle some balsamic glaze onto the roasted asparagus for some extra zing.

Rice With Mushrooms
Rice with mushrooms is an ideal companion to Costco salmon, especially if you want something satiating, delicious, and quick. I like to sizzle the mushrooms with some garlic powder before I add them to the rice.
I don’t want the rice to be too creamy, so I don’t cook it too long, but feel free to make it as you like it best; everything goes. I don’t like adding too much spice, so only salt and pepper are enough for me.
Still, rice with mushrooms goes great with herbal spices, and so does salmon, so if you want to, you can sprinkle it with some oregano or basil on top.

Grilled Zucchini and Eggplant
To enjoy this side, you absolutely need to love zucchini and eggplant, so if you aren’t crazy in love with them, don’t waste your time. If, on the other hand, you love them as I do, you are in for a treat.
You can grill the zucchini and eggplant plain and season them lightly afterward, or have them marinate in olive oil, salt, pepper, and garlic powder and cook them already seasoned. Either way, you will definitely love how this side pairs with the buttery and nutty taste of your Costco salmon.
For a fancier plate, add a few lemon wheels to the fish and sprinkle minced fresh parsley on the zucchini and eggplant.

If you have some time to spare, I recommend you pair your Costco salmon with garlic mashed potatoes. The making procedure is the same, you just add some garlic powder in the end, and that’s it.
Still, my favorite garlic mashed potatoes contain fresh garlic instead of powdered garlic. I just mince and sizzle the garlic and add it to the mashed potatoes after I mash them. The aroma the garlic gives to the dish is definitely incomparable.
Serve your salmon with garlic mashed potatoes on the side topped with fresh minced parsley. You will enjoy the extra crunch of the parsley as well as the splash of greenery in your dish. I also like to combine it with peas and pea sauce because, all together, it tastes amazing.
