You will succeed if you ensure that your bowl and beaters are clean, grease and water-free; if there is no trace of egg yolks in the egg whites; and if you beat the whites at high speed for at least two minutes.

Another tricky part is when you are adding egg white foam to egg yolks. You shouldn’t mix them together because it will lose its airy texture. Rather, gently and slowly fold the foam into the yolk mixture until you get a nice and even texture.

The real taste of the dish depends on the sausage you choose. If you are going for a mild flavor, opt for bratwurst or Italian sausages. On the other hand, for a spicier kick, try chorizo. If you want smoky flavor, then andouille sausage is the type you are looking for.

Ingredients
  

  • 6 sausages
  • ½ cup beer
  • 2 eggs
  • 12 tbsp flour
  • ½ tsp salt
  • ½ tsp baking powder
  • 2 cups oil approximately, for frying

Instructions
 

  • Cook the sausages and let them cool slightly.
  • Separate the egg yolks from the egg whites. Set the yolks aside for now, and beat the egg whites in a clean bowl for about 2 minutes until stiff peaks form. Be careful not to have any trace of yolks in the whites to achieve a firm foam.
  • In the yolks, add the beer, flour, baking powder, and salt. Mix well.
  • Once you have a homogeneous mixture, gently fold the egg whites into the yolk mixture using a spatula. Do not use a mixer for this step.
  • Set the beer batter aside and heat the oil in a frying pan. The amount of oil depends on the size of your pan, but it should be about two-thirds deep.
