- 3 medium zucchini
- 2.8 oz gouda cheese grated
- 1.1 oz parmesan cheese grated
- 1 tsp garlic powder
- 2 eggs
- 1/2 tsp salt + 1 tsp for zucchini
- 1.8 oz almond flour
Toppings
- 4.4 oz mozzarella grated
- 3.5 oz gouda cheese grated
- 1 spring onion thinly sliced
Grate the zucchini and sprinkle with 1 tsp salt. Let it sit for at least 30 minutes to draw out moisture. Squeeze the excess water out using a kitchen towel.
Preheat the oven to 450°F. Line a baking sheet with parchment paper.
Mix the grated zucchini, gouda, parmesan, garlic powder, eggs, 1/2 tsp salt, and almond flour until well combined. Spread the mixture thinly over the parchment paper.
Bake in the preheated oven for 20-25 minutes until golden and firm.
Sprinkle the baked base with mozzarella and the additional gouda. Return to the oven and bake for another 6-8 minutes until the cheese is bubbly and slightly golden.
Cut into breadsticks and garnish with thinly sliced spring onion.
