Surimi Salad 4 croissants 12 surimi sticks ½ cucumber ½ cup sliced olives Salad Dressing 3 tbsp olive oil 2 tbsp lemon juice 2 tsp fresh parsley ½ tsp salt ⅕ tsp black pepper
Peel the cucumber and prepare the rest of the ingredients.
Chop the olives into slices, then surimi sticks and cucumber into cubes.
In one bowl mix all the ingredients for salad dressing. Lemon juice should be freshly squeezed, while parsley should be finely chopped.
Pour the salad dressing over the surimi, olives and cucumber. Mix slowly, but well.
Leave the salad to rest for about 15 minutes. Allowing the salad to rest for a little bit before eating can enhance its flavor and texture.
After some time, carefully slice the croissant horizontally, stopping just before you cut completely through, leaving a hinge on one side.
Fill the croissants with surimi salad and serve immediately. Enjoy!
