This Instant Pot Shredded Chicken recipe is the perfect combination of tender chicken and a tangy homemade BBQ sauce. For the Chicken:
- 3 boneless skinless chicken breasts (about 1.7 pounds)
- 4 garlic cloves
- 2 bay leaves
- 2¼ cups 550 ml chicken broth
For the BBQ Sauce:
- ¾ cup 200 g ketchup
- 2 tbsp Worcestershire sauce
- 3 tbsp brown sugar
- ½ tsp salt
- ⅓ tsp black pepper
- 1 tsp smoked paprika
- 1 tsp garlic powder
- ½ tsp onion powder
Additional:
- 4 burger buns
- Coleslaw or veggies of your choice
In the Instant Pot, place the chicken breasts, garlic, bay leaves, and chicken broth. Cook under high pressure for 5 minutes.
Remove the bay leaves and garlic. Leave the broth in the pot and shred the chicken using two forks. Return the shredded chicken to the Instant Pot.
In a bowl, mix together all the ingredients for the BBQ sauce. Pour the sauce over the shredded chicken and stir to combine.
Cook on high heat, uncovered, for another 3-5 minutes until the sauce thickens slightly.
Assemble your burgers by placing the shredded chicken on the buns and topping with coleslaw or your favorite veggies. Enjoy!
