- 1.3 pounds turkey breast cutlets
- Salt pepper, garlic powder for seasoning
- 3 eggs
- ⅔ cup flour
- 1 cup breadcrumbs
- Juice and zest of ½ lemon
- Sunflower oil for frying
- 3 tbsp butter for frying
Place turkey cutlets between two pieces of plastic wrap or parchment paper and pound to an even thickness using a meat mallet. Season both sides with salt, pepper, and garlic powder.
Set up three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs.
Dredge each cutlet in flour, dip in egg, then coat in breadcrumbs.
For frying: Heat oil and butter in a deep skillet over medium-high heat. Fry each schnitzel for about 2-3 minutes per side until golden and crispy. Drain on paper towels.
For baking: Preheat oven to 400°F. Place breaded cutlets on a baking sheet lined with parchment paper, spray lightly with oil, and bake for 20-25 minutes, turning halfway through, until crispy.
Spritz cooked schnitzels with lemon juice before serving.
