Equipment

  • 1 large skillet
  • 1 meat mallet
  • 3 bowls for breading
  • 1 Sharp Knife

Ingredients

  • 1.3 pounds turkey breast cutlets
  • Salt pepper, garlic powder for seasoning
  • 3 eggs
  • cup flour
  • 1 cup breadcrumbs
  • Juice and zest of ½ lemon
  • Sunflower oil for frying
  • 3 tbsp butter for frying

Instructions

  • Place turkey cutlets between two pieces of plastic wrap or parchment paper and pound to an even thickness using a meat mallet. Season both sides with salt, pepper, and garlic powder.
  • Set up three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs.
  • Dredge each cutlet in flour, dip in egg, then coat in breadcrumbs.
  • For frying: Heat oil and butter in a deep skillet over medium-high heat. Fry each schnitzel for about 2-3 minutes per side until golden and crispy. Drain on paper towels.
  • For baking: Preheat oven to 400°F. Place breaded cutlets on a baking sheet lined with parchment paper, spray lightly with oil, and bake for 20-25 minutes, turning halfway through, until crispy.
  • Spritz cooked schnitzels with lemon juice before serving.
