  • 1 large mixing bowl
  • 1 electric mixer
  • 1 baking dish

Ingredients
  

  • 2 eggs
  • 1/3 cup sugar
  • 1 1/2 cups milk
  • A pinch of salt
  • 1/4 cup oil
  • 2/3 cup cornmeal
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 3/4 cup sour cream at least 20% fat
  • 2 cups mixed berries or fruit of choice, can be fresh or frozen

Instructions
 

Prepare:

  • Preheat your oven to 400°F (200°C). Grease and flour your baking dish.

Mix the Wet Ingredients:

  • Beat the eggs and sugar with an electric mixer until fluffy. Add the salt, milk, and oil, and continue mixing.

Add the Dry Ingredients:

  • Gradually mix in the cornmeal, flour, and baking powder until well incorporated.

Assemble:

  • Pour the batter into the prepared dish. Evenly spread the sour cream over the top, then scatter the mixed berries.

Bake:

  • Bake for about 30 minutes, or until the cornbread is cooked through and golden. Allow to cool in the pan for at least 10 minutes before slicing, though it's best served completely cool. If you prefer a sweeter touch, sprinkle some powdered sugar on top before serving.
