Dough:
- 14 ounces pizza flour (type 00)
- 1/4 ounce fresh yeast or 1/10 ounce (3 g) dry yeast
- 1 teaspoon salt
- 1 cup lukewarm water
Sauce:
- 10.5 ounces tomato passata
- 1 tablespoon olive oil
- 1 tablespoon sugar
- 1½ teaspoons oregano
- 1 teaspoon garlic powder
- A pinch of salt and pepper
Toppings:
- 12.3 ounces shredded Gouda cheese
- 12.3 ounces cooked ham, shredded
- 12.3 ounces mushrooms, thinly sliced
- Oregano to taste
- Olives to taste
Dough: In a large bowl, mix flour and salt. Create a well, add crumbled yeast, and pour in warm water. Mix and knead until smooth (about 10-15 minutes). Oil the dough and bowl, cover with plastic wrap touching the dough, and let rise for at least 1 hour.
Sauce: Mix all sauce ingredients in a bowl.
Assembly: Divide the dough into three parts, shape each, and let rest. Roll out on a floured surface, apply sauce, then layer with ham, cheese, and mushrooms.
Baking: Bake at 435°F (225°C) for about 12 minutes.
