Cheese Borek Recipe with Filo Pastry

Equipment

  • 1 mixing bowl
  • 1 pastry brush
  • 1 round baking pan

Ingredients
  

  • ½ cup vegetable oil
  • ½ cup sparkling mineral water
  • 10.5 oz filo pastry sheets 300 g
  • 1 lb cottage cheese 500 g
  • 2 eggs
  • 1 teaspoon salt

Instructions
 

  • Preheat your oven to 400°F (200°C).

Prepare the Oil Mixture:

  • In a cup, mix together the sparkling mineral water and vegetable oil. This will be used to brush the filo sheets.

Make the Cheese Filling:

  • In a mixing bowl, combine the cottage cheese, eggs, and salt. Stir well until all ingredients are thoroughly mixed.

Prepare the Baking Pan:

  • Grease a 10-inch round baking pan or springform pan with a bit of the oil and water mixture.

Layer the Filo Sheets:

  • Place one filo sheet in the pan, letting the excess hang over the edges. Brush it with the oil mixture.
  • Repeat with a second filo sheet.
  • On the third sheet, spread half of the cheese filling evenly over the surface.

Add More Layers:

  • Cover the filling with three more filo sheets, brushing each with the oil mixture.
  • On the third sheet, spread the remaining cheese filling.

Fold and Seal:

  • Fold the overhanging edges of the filo sheets towards the center to seal the borek. Brush each folded piece with the oil mixture to ensure they stick together.

Bake:

  • Place the borek in the preheated oven and bake for 35 minutes, or until golden brown.

Serve:

  • Allow it to cool slightly before slicing. Serve warm, perhaps with a glass of yogurt on the side.
