- 3 eggs
- 3 tsp baking powder
- 1 cup milk
- ½ cup ricotta
- 2 tbsp butter melted
- 1 tbsp rum
Grease or spray non-stick pan. Heat over medium-high heat or electric griddle to 375°F.
Stir all ingredients until blended.
Pour by slightly less than 1/4 cupful onto hot pan.
Cook until edges are dry; about 1 minute 30 seconds.
