Equipment

  • 1 Waffle maker
  • 1 Deep pan
  • 1 Hand mixer

Ingredients

Red Velvet Waffles

  • cup Betty Crocker Red Velvet Cake Mix
  • 1 tbsp vegetable oil
  • ¾ cup milk
  • 1 egg

Buttermilk Chicken

  • 4 pieces chicken breasts
  • 1 cup buttermilk
  • 3 tsp baking powder
  • 1 cup all-purpose flour
  • salt and pepper to taste
  • ½ tsp dry oregano
  • ½ tsp paprika
  • ½ tsp garlic powder
  • ¼ tsp onion powder
  • ¼ tsp dry thyme
  • ¼ tsp dry parsley

Other Ingredients

  • vegetable oil for frying
  • ½ cup maple syrup

Instructions

  • Season the chicken breasts with salt and pepper to taste. Pour 1 cup of buttermilk over it and leave it to marinate for a few hours in the fridge.
  • While the chicken breasts marinate, you should prepare the mixture to cover them before frying. To do that, combine paprika, powdered onion and garlic, dry oregano, dry parsley, and dry thyme in one bowl, and then add this seasoning mixture to flour and baking powder.
  • Take the chicken and cover it with flour and seasoning mixture.
  • Heat the oil in the pan, but be careful not to be too hot because it will then quickly burn the chicken on the outside while leaving the meat raw inside.
  • Fry the chicken in heated oil for about 5-12 minutes on each side. The frying time depends on the thickness of the piece. Once it is golden brown in color, it's done.
  • Place buttermilk chicken on paper towels to soak the extra grease.
  • Mix the Red Velvet cake mix with the rest of the ingredients for waffles and leave the batter for 15 minutes for everything to blend nicely.
  • Heat up the waffle maker and bake each waffle for about 2 minutes.
  • Once the waffles are done, serve chicken on top and pour some maple syrup over them.
  • I recommend serving it with scrambled eggs or a fruit salad.

Notes

Leftovers of red velvet waffles and chicken can be stored in an airtight container or a resealable bag for up to 4 days. When storing leftovers, ensure that all the components – waffles, chicken, and maple syrup – remain separate until it is time to reheat.
