Chocolate Muffins from Brownie Mix

Surprisingly simple process of converting a standard brownie mix into mouth-watering chocolate muffins. I worked with Betty Crocker Brownie mix, but also shared the tips for any brownie mix in the article.

Equipment

  • 1 muffin tin
  • 12 muffins cups

Ingredients
 
 

  • 1 box Betty Crocker Fudge Brownie Mix
  • 1 tsp baking soda optional
  • 1 egg
  • ½ cup water
  • 3 tbsp vegetable oil

Instructions
 

  • Preheat the oven to 325 °F (160 °C).
  • Place the boxed mix in one bowl and stir in baking soda.
  • Then, add the rest of the ingredients and mix until blended; one minute should be sufficient.
  • Line the muffin tin with paper cups and divide the brownie mixture into 12 cups, filling each halfway.
  • Bake the muffins for 25 minutes. After baking, remove them from the oven and allow to cool for at least 10 minutes. These muffins are delicious whether enjoyed warm or cold. Enjoy!

Notes

I've listed baking soda as an optional ingredient because it offers a choice between a brownie-like or more cake-like texture. Include baking soda if you prefer a cake-like texture.
