Allow the butter to soften at room temperature or soften it on the stovetop. Be careful, as the butter may start to melt. Stir it continuously.
Add lemon zest, grated garlic, salt, and pepper to the softened butter. Mix well.
Thread the shrimp onto wooden skewers and coat them with the garlic-lemon butter on all sides.
Prepare a grill pan and heat olive oil in it. Once hot, add the shrimp skewers and grill them for about 4 minutes on each side.
When the Texas Roadhouse-style shrimp are done, place them on a plate and prepare the toasted bread or bagels.
Cut the bagel in half and spread butter on each half. Place them on the grill pan until they are toasted. This should only take between 30 seconds and 1 and a half minutes, depending on the heat.
Serve the toasted bagels alongside the shrimp skewers with a lemon wedge. Sprinkle chopped fresh parsley over the skewers. If you have any extra lemon-garlic butter, melt it and serve it as a dipping sauce. Enjoy!
