Equipment

  • 1 Waffle maker
  • 1 blender
  • 1 Mixer

Ingredients

  • 2 tbsp melted butter
  • 1 cup milk
  • 2 cups spinach (I used baby spinach)
  • 2 eggs
  • 1 tsp baking powder
  • cup all-purpose flour
  • cup grated cheddar
  • 1 tsp salt
  • dash of pepper and Cayenne pepper

Instructions

  • Start by combining spinach with milk and spices in a blender. There should be no pieces of spinach left. When you get a nice liquid, transfer it to a mixing bowl. In the meantime, preheat the waffle maker.
  • Add eggs and melted butter and continue to whip. Now add the rest of the ingredients and combine them. You should get a homogenous blend.
  • Pour half of the cup into your waffle maker and bake each serving for 1-2 minutes, depending on how strong is your waffle maker. The waffle's surface should be brownish.
  • Serve warm with your favorite topping!

Notes

Here are the topping ideas:
  • cream cheese, egg and smoked salmon
  • deli meats, Gouda and mayo
  • ham and cheese with a little bit of horseradish spread
  • yogurt and garlic
  • mozzarella and cherry tomatoes
  • fried eggs and bacon
  • ricotta and avocado
  • salsa
  • chicken salad
