Instructions
Start by nicely seasoning the pork chops with salt, pepper, and powdered garlic, and leave them like that for at least 30 minutes.
The next step is to brown the pork chops in a large skillet. This can be done by heating some oil in the skillet over medium-high heat and then cooking the pork chops for about 4 minutes per side.
Use the time while the pork chops are cooking to cut the onion and pepper into strips.
Once the pork chops are browned, remove them from the skillet, and set them aside on a plate.
Now, add the onion to the same and stew it for 3 minutes. After that, add peppers and stew them for another 3 minutes before adding a can of tomatoes to it.
Add water and put the pork chops back into the skillet.
Season everything to taste, put the lid on top, leaving it half open and let the dish stew for approximately half an hour at light heat. Stir everything from time to time to avoid sticking to the skillet.
Notes
You can always experiment a bit and maybe add some cayenne pepper instead of chili powder. Also, to get a complete Mexican-style dish, you will also need corn beans, so you can add 1/4 of a cup to the mix.If you have leftovers from this dish, simply store them in an airtight container in the fridge. They will last for up to 3 days.
