Bake the Perfect Cupcake: Step 8
8. Don’t leave the cupcakes in their pans.
Allow the cupcakes to cool for no more than a couple of minutes in their baking pans before you remove them to a wire rack to cool down properly. The heat from the pan will cause the cupcakes to overcook, which will tend to dry them out.
Use a potholder and gently shake the cupcakes out of the pan, then place them onto the rack and leave them there until they have cooled completely. Don’t try to frost the cupcakes too soon!
Even a tiny bit of warmth coming off a cupcake can melt your frosting.
