If you like chicken dishes then you are going to love this recipe. I absolutely love cheese and find it so addictive. Melted cheese not only tastes good but gives the chicken that golden crispy covering that just excites the senses.

What I like about this recipe is that it not only is really simple with only a few ingredients its also very quick and can be made in about 45 minutes from start to finish. Scrumptious Crispy Cheesy Baked Chicken

Ingredients

  • 4 large chicken breasts
  • 2 sleeves roasted vegetable Ritz crackers
  • 1/4 teaspoons salt
  • 1/8 teaspoon pepper
  • 1/2 cup buttermilk
  • 3 cups cheddar cheese, grated
  • 1 teaspoon dried parsley

Instructions

  1. Crush crackers. Pour the milk, cheese and cracker crumbs into 3 separate small pans. Toss the salt and pepper into the cracker crumbs and stir the mixture around to combine. Dip each piece of chicken into the milk and then the cheese. Press the cheese into the chicken with your fingers. Then press the cheesy coated chicken into the cracker crumbs and press it in. (Some of the cheese will fall into the crackers. Not that there is anything wrong with that)
  2. Spray a 9×13 pan with cooking spray and lay the chicken inside the pan. Sprinkle the dried parsley over the chicken. Cover the pan with tin foil and bake at 400 degrees for 35 minutes. Remove the tin foil, bake for an additional 10-15 minutes, or until the edges of the chicken are golden brown and crispy.

    I am using Cheezits instead of buttery crackers. Hope they hold up.

    Hi Julie,

    Is it better to cook the chicken on a rack instead of putting it directly in the pan? I’m thinking the chicken may cook evenly w/the rack. Thanks

      Hi Tonya,

      Thats a good point, it may well cook more evenly on the rack. I have found cooking it in the pan to be more preferable for myself. but thats just a personal preference. There is no reason why you can’t use a rack instead.
