Minty Dark Chocolate Chip Peppermint Cupcakes

Ingredients

  • 1/2 cup of unsalted fresh butter
  • 3/4 cup of freshly brewed coffee
  • 1 teaspoon of vanilla
  • 1/4 cup and 2 Tablespoons of dark chocolate powdered cocoa
  • 1/3 cup of sour cream
  • 1 medium egg
  • 1 cup of raw sugar
  • 1 cup of good quality flour
  • 3/4 teaspoons of baking soda
  • 1/2 teaspoon of sea salt
  • Whipped Peppermint Dark chocolate Chip Buttercream
  • 1/2 cup of unsalted fresh butter at room temperature
  • 1lb of powdered icing sugar
  • 1/2 cup of fresh heavy whipping cream
  • 2 teaspoons of peppermint or mint extract
  • pinch of sea salt
  • 1/4 cup of very finely sliced good quality dark chocolate
  • natural green gel food colouring
  • 12 dark chocolate pieces, for the finishing garnish

Instructions

  1. Pre-heat stove to 350 F degrees. Carefully Line the cupcake pan with fresh liners.
  2. Using a medium sized saucepan, slowly melt the unsalted butter. Then add the coffee, powdered cocoa, along with vanilla flavouring and stir till blended. Put aside to cool down a little.
  3. Using a sizeable bowl, sift collectively the raw sugar, baking soda, flour, and sea salt. Put aside.
